Bamboo / Carbon - Not sure which one to choose for all-terrain

Hi folks, I'm just struggling with the choice between Bamboo GTX or GT Carbon.

The situation:

All tracks in my area are gravel roads (such as found in parks etc.) or dirt roads (as seen here). So I am interested in an Evolve with all terrain wheels. According to many YouTube videos I think the all terrain wheels could handle this terrain (if it does not get too extreme), or not?

But if so, which one should I choose, the Bamboo or the Carbon deck? I know that the Bamboo is more flexible. Is this an advantage or a disadvantage on uneven terrain or gravel roads? Do you think this will improve the shock absorption when riding along gravel? Or would it make steering there more difficult?

I am 1,70m and 65kg so I fear the Carbon would be too stiff and too big for me.

Could someone give me a hint which one to choose?
